Beef Recipes

Southern Burgers

8 pounds ground beef
5 cups chopped onion
8 cans (10 1/2 ounces each) condensed chicken gumbo soup
1 1/2 cups ketchup
1 to 1 1/2 cups prepared mustard
48 hamburger buns, split and toasted

Cook and stir ground beef and onion until meat is brown. Drain off fat. Stir in soup, ketchup and mustard. Simmer uncovered 15 minutes, stirring occasionally. Serve in buns. 48 servings.

Oven-Barbecued Steaks

3 pounds beef round steak, 3/4 inch thick
2 tablespoons salad oil
3 tablespoons instant chopped onion
3/4 cup ketchup
3/4 cup water
1/2 cup vinegar
1 tablespoon brown sugar
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper

Cut meat into 10 serving pieces. In large skillet, brown meat in oil over medium heat; remove meat to Dutch oven. Add remaining ingredients to skillet; simmer 5 minutes. Pour ketchup mixture over meat. Cover; bake 2 hours or until meat is tender.
